Warm, gooey cookie. A scoop of melting vanilla ice cream. Two spoons and your favorite person on the couch. If you’ve ever had a Pizookie® from BJ’s, you already know the magic—and the best part is you can recreate the whole experience at home in under 30 minutes, no reservation required.

Homemade Pizookie skillet cookie topped with vanilla ice cream for an at-home date night.

Last week, my husband and I really wanted a BJ’s Pizookie date (if you saw our BJ’s Date Night, you know how much we love it). But life was busy, we couldn’t get away, and honestly? We didn’t want to change out of our comfy clothes. So we brought the date home instead—and it turned into one of the simplest, coziest date nights we’ve had in awhile.

This post walks you through exactly how to pull off an at-home Pizookie date night, including our foolproof skillet cookie recipe, fun flavor twists, a free printable recipe card, and easy ways to turn “making dessert” into a real, connected date—even on a weeknight.

What Is a Pizookie?

A Pizookie is a pizza-shaped cookie baked in a small skillet and served warm with ice cream melting on top. The name is a playful mash-up of “pizza” and “cookie,” and it was made famous by BJ’s Restaurant & Brewhouse—“Pizookie®” is actually their registered trademark. Outside of BJ’s, you’ll also see the same dessert called a skillet cookie or deep-dish cookie.

The idea is simple and irresistible: instead of scooping dough into individual cookies, you press it into a skillet and bake it as one big, soft cookie. The edges go golden and slightly crisp while the middle stays warm and gooey—then you crown it with cold vanilla ice cream and eat it straight from the pan with two spoons. It’s basically built for sharing, which makes it a perfect date-night dessert.

Our At-Home Pizookie Date Night

Here’s exactly how our night went, in case you want to steal it start to finish:

We changed into comfy clothes, turned on some music, and—yes—danced around the kitchen while we mixed up the cookie dough. There’s something about music and a little silliness that instantly makes an ordinary Tuesday feel like a date. We pressed the dough into our mini skillets, popped them in the oven, and set a timer.

While the Pizookies baked, we pulled out Rummikub (one of my all-time favorite games) and played a quick round at the kitchen table. It was the perfect built-in activity—long enough to actually talk and laugh, short enough that we could pull it off on a busy night. When the timer went off, the whole kitchen smelled like a bakery.

We added big scoops of vanilla ice cream right on top, moved to the couch, cuddled up under a blanket, and ate our warm Pizookie together. That was it. No reservation, no babysitter, no spending a dime we didn’t want to. It was so simple—but it was exactly what we needed. And that’s kind of the whole point: connection doesn’t have to be complicated.

Why a Pizookie Date Is Perfect for Busy Couples

If you’re short on time, energy, or budget (so, all of us), this date checks every box:

  • It’s fast. Start to first bite in under 30 minutes.
  • It’s cheap. A handful of pantry staples and a tub of ice cream—way less than dinner out.
  • It’s at home. No sitter, no reservation, no changing out of your sweatpants.
  • It’s hands-on together. Mixing, dancing, and sharing one dessert naturally pulls you side by side.
  • It’s flexible. Do it on a random weeknight or make it a weekly tradition.

What You’ll Need

The beauty of a Pizookie is that you probably have most of this already. For the cozy two-skillet version we love, you’ll want:

  • Two small oven-safe skillets (6-inch mini cast-iron skillets are perfect—one for each of you)
  • Basic cookie ingredients (full recipe below)
  • Your favorite vanilla ice cream
  • Two spoons and someone you love

How to Make a Pizookie at Home

Making a Pizookie is genuinely easy—watch it come together start to finish, then follow the recipe below.

This is our tried-and-true chocolate chip Pizookie recipe—the exact one we reach for on date night. It makes two skillet cookies, so you each get your own (or share one and save the second for tomorrow).

Prep: 10 min  •  Bake: 15–20 min  •  Total: ~30 min  •  Makes: 2 skillets

Ingredients

  • 1 cup unsalted butter
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 eggs, room temperature
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¾ tsp salt
  • ¼ tsp baking soda
  • 1 ½ cups chocolate chips
  • Vanilla ice cream and toppings, to serve

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, cream together the butter and sugars. Beat in the eggs and vanilla until smooth.
  3. In a small bowl, whisk together the flour, baking powder, salt, and baking soda. Gradually add the flour mixture to the butter mixture.
  4. Stir in the chocolate chips, then divide the cookie dough evenly between 2 skillets, spreading it to the edges.
  5. Bake until the center is cooked through, about 15–20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from the oven and cool slightly.
  7. Serve warm with vanilla ice cream and your favorite toppings.

Becca’s tips for the perfect Pizookie: For a gooier center, pull it a couple minutes early; for a fully set cookie, bake until a toothpick comes out clean. Room-temperature eggs and softened butter blend smoother and bake more evenly. Serve right away for that warm-cookie-meets-cold-ice-cream contrast that makes a Pizookie a Pizookie. No skillet? A pie plate or small oven-safe dish works in a pinch.

Fun Pizookie Flavor Variations

Once you’ve got the base down, it’s easy to mix things up. Take turns picking a “flavor of the week” for your date nights:

  • Classic Chocolate Chip — the original, and never wrong.
  • Brookie — half brownie batter, half cookie dough for the best of both.
  • Peanut Butter Cup — swap in peanut butter chips and press mini cups on top.
  • Snickerdoodle — skip the chips and sprinkle cinnamon-sugar over the top.
  • Cookies & Cream — fold in crushed sandwich cookies.
  • Gluten-Free — use a 1:1 gluten-free flour blend; it works beautifully.
  • Triple Chocolate — cocoa in the dough plus white and dark chips.

Make It a Real Date (Not Just Dessert)

The cookie is the excuse—the connection is the point. Here’s how we turned ours into an actual date, and how you can too:

Turn on a playlist

Put on the music you danced to when you were first dating and let the kitchen become the dance floor while you mix. Instant nostalgia, instant fun.

Play a game while it bakes

Those 15–20 minutes of bake time are perfect for a quick game. We love Rummikub, but a few hands of cards, a quick round of a two-player game, or even a set of conversation starters works just as well.

Try a few conversation starters

While you wait, take turns answering: What’s your favorite date we’ve ever been on? What’s something you want to do together this year? When did you first know you liked me? Little questions, big connection.

The Spark’d App is the perfect place to find questions for couples! You can even sync with your spouse to see each other’s answers and to play fun date night games.

Cuddle up to eat

Move to the couch, share one skillet with two spoons, and just be together. If you want to play some fun date night games for couples right on your phone while you eat, download the Spark’d app.

Pizookie Date Night FAQ

What is a Pizookie?

A Pizookie is a large, pizza-shaped cookie baked in a skillet and topped with ice cream while still warm. The name combines “pizza” and “cookie.” It was popularized by BJ’s Restaurant & Brewhouse, where “Pizookie®” is a registered trademark; the same dessert is also known as a skillet cookie.

What size skillet do I need for a Pizookie?

A 6-inch mini cast-iron skillet is ideal for a personal Pizookie, and an 8-inch skillet makes a great shareable one. This recipe makes two skillet cookies and divides perfectly between two 6-inch minis.

Can I make a Pizookie without a cast-iron skillet?

Yes! Any oven-safe dish works—a metal or ceramic pie plate, a small baking dish, or an oven-safe ramekin. Cast iron just holds heat well and keeps the cookie warm longer at the table.

How do I keep the center gooey?

Take the Pizookie out when the edges are golden but the center still looks slightly underbaked. It continues cooking in the hot skillet, leaving you with soft, gooey middles. For a fully set cookie, bake until a toothpick comes out clean.

What’s the best ice cream for a Pizookie?

Classic vanilla is the go-to because it lets the warm cookie shine, but cookies-and-cream, salted caramel, or vanilla bean are all delicious. Add it right before serving so it starts to melt into the cookie.

Is a Pizookie a good at-home date night idea?

Absolutely. It’s quick, inexpensive, and hands-on—you make it together in under 30 minutes, share one dessert, and have built-in time to talk or play a game while it bakes. It’s one of the easiest cozy date nights for busy couples.
